Seeking an experienced head chef to take operational responsibility for a large scale London hotel with several onsite restaurant facilities…

*Ensuring that all Health & Safety, Fire Safety and Food Hygiene Regulations are met and enforced within the kitchens.
*Supervising Breakfast Service in the kitchens, ensuring that a professional and efficient service is constantly provided.
*Responsible for banqueting events (day and evening) for up to 500 covers.
*To ensure effective control of stock purchasing, storage and preparation service with regard to quality, quantity and safety.
*Maintain a high level of food quality and production with aims of exceeding guest's expectations.
*Menu planning and creating new dishes for all restaurants, banqueting, masonic and staff menus.
*Responsible for managing a brigade 50-60 staff
*To build and motivate kitchen team.
*To brief and train kitchen team to prepare and cook all food to a consistently high standard of taste, presentation, hygiene and safety.
*Responsible for ensuring that allergen information is updated and compliant with the European Food Information
*Implement Food Safety systems and ensure procedures are adhered to.
*Responsible for training needs of all staff, ensuring all staff are compliant and up-to-date with Food Safety, Food Hygiene and Allergens.
*Responsible for managing staff in relation to all people and performance activities, e.g. rota management, payroll, holiday approval, sickness absence, recruitment & selection, training & development, performance management (formal & informal), conflict resolution etc.

*Experience working in a professional kitchen
*Experience managing 30 - 40+ staff members
*Health and safety and food hygiene certificates
*Extensive knowledge on food safety
*Fluent written and spoken English is essential, with excellent communication skills.
*Excellent cooking skills
*An understanding of produce and ingredients
*The ability to write menus that are both creative and profitable
*City & Guilds diplomas in professional cookery or equivalent
*A foundation degree in culinary arts (Desirable)
*BTEC HND in professional cookery (Desirable)

The salary on offer is up to £45,000 DOE
