The Horse & Groom are looking for a passionate and talented Sous Chef to help lead our kitchen which is busy, fast paced, and full of energy. Our restaurant offers all-day dining and focus on using fresh seasonal produce to develop a dynamic menu. In the heart of the village of East Ashling, West Sussex, the Horse & Groom is an 18th Century pub renowned for their excellent freshly cooked food, fine wines, and real ales. It also has ten newly refurbished bedrooms and an active events programme. The pub enjoys very busy summers with its proximity to Goodwood and the Sussex Downs.

The pub sits at the heart of the community of East and West Ashling and welcome locals and visitors alike. Over lockdown we have delivered free meals to vulnerable locals and raised £10,000 for local charities through our charity bakery and the efforts of our volunteers. Upon reopening we have been rewarded by strong local support and very strong trading. This is a new role that we are creating.

Your role as Sous Chef would involve working alongside the Head Chef to lead the kitchen team on a day-to-day basis. You must ensure that quality, consistency, and speed of service are always upheld and help to enhance development among a team of 4/5. You must also be able to competently manage all kitchen operation duties in the absence of the Head Chef. As a Sous Chef, you need to be able to demonstrate a good all-round approach to running a fast-paced restaurant; ideally, we are looking for someone who can keep their cool, have fun and make amazing food, fast and under pressure.

Role Responsibilities

  1. To provide a safe & clean working environment for all chefs according to Health and Safety legislation and regulations
  2. To support the Head Chef in ensuring that all sections are adequately staffed with chefs trained and qualified to work those sections
  3. To help the Head Chef recruit kitchen team members following company employment procedures
  4. To liaise and effectively communicate with the Head Chef and Front of House at all times
  5. To help control the expediting of food and ensure customers receive the highest quality of food and service possible.
  6. Ensure food production and standards are carried out in a timely fashion across all services & every section
  7. To report all complaints, incidents, accidents, and other irregularities to the Head Chef, and/or Manager.
  8. Must be adaptable and flexible with working patterns when required

  • Good communication skills to enable effective dialogue with colleagues and customers 
  • Strong time-management and organisational skills
  • A positive attitude and leadership approach to motivate and encourage a team of aspiring chefs
  • Team-work driven and results focused
  • Displays a smart and professional appearance, representing the company in a positive manner
