The Chef De Partie will be responsible for keeping the kitchen running smoothly by being competent in the preparation of basic & advanced mis en place across ALL sections. Supporting & capable of running the MAJORITY of sections during service. Demonstrating and teaching the core mechanics of a kitchen, and engaging junior members of staff at every opportunity to further their development.


Duties and Responsibilities

  • To frequently taste all dishes & there ingredients independently and to actively engage junior chefs to do the same.
  • Refine their own palette, by requesting repeated feedback from senior chefs.
  • To be inquisitive, and curious about flavour paring, cooking techniques & cuisine styles.
  • Continuing to Learn and understand different ingredients, there preparation, cuisine style and usage, with a greater focus on seasonality and their flavour profiles.
  • Preparation of Patient, Staff & Hospitality meals. Observing, learning, teaching and experimenting with plating techniques
  • Execute & enforce the maintenance of kitchen work areas
  • Oversee and manage Commis chef responsibility’s
  • Keeping ALL food storage areas immaculate, understanding and performing correct stock rotation and labelling
  • Complying & performing daily cleaning rotas
  • Supporting junior chefs on the receipt of food deliveries from suppliers, learning ingredients and the optimum way to store them
  • To be well organised, and able to manage less experienced members of the team
  • Most importantly keen to improve, and climb the ladder, and be confident enough to propose alternative suggestions to plating, cooking and seasoning
  • Self-motivated is a must

There is supervision responsibility of other staff.


An apprenticeship is a funded programme where an individual learns new skills, knowledge and behaviours in a chosen sector. An apprenticeship will enable you to work and earn a wage whilst developing and gaining new skills as an employee.


Alongside your day to day duties, you will complete the Chef de Partie Level 3 Apprenticeship. This is a nationally recognised qualification and the primary objective of the Commis Chef is to learn and understand how to carry out the basic functions in every section of the kitchen. You will attend college 1 day each week during term-time and will be supported through this qualification by your Personal Development Coach.You will be visited at your place of work. All travel expenses will be covered by your employer. You are not expected to complete any of your Apprenticeship work outside of your working hours. .

SALARY:  £12.46 per hour

LOCATION: The Portland Hospital, 205-209 Great Portland Street, London W1W 5AH

REPORTING TO: Tracy Snooks

HOURS/WORKING PATTERN: 40 hours per week Monday to Sunday, varying shift pattern

DURATION: Minimum 18 months
